Doggy Bag featuring Jamaican Kebabs


The Doggy Bag segment features recipes for refreshing and reinventing take home food.  Here we feature left-over grilled chicken breast and create Jamaican Kebabs over Spicy Rice.

Left-Over:     Grilled Chicken Breast

INGREDIENTS

  • 2 Chopped Scallions
  • 1 Jalapeno
  • 2 Tbsp White Wine Vinegar
  • 1 Tbsp Worcestershire Sauce
  • 1 Tbsp Ground All Spice
  • 1 Tbsp Fresh Thyme
  • 1 Bell Pepper
  • Cherry Tomatoes
  • 1 Mango
  • Metal Or Wood Skewers

PREPARATION

 Rice:

  1. Cook 1 cup of rice
  2. 5 minutes before the rice is done, add marinade to flavor the rice.

 Marinade:

  1. In a Food Processor combine Scallions, Jalapeno, Vinegar, Worcestershire Sauce, all spice and Thyme

Skewers:

  1. Cut Chicken, Mango and Pepper in 2” squares
  2. Assemble Skewers
  3. Brush marinade sauce
  4. Cook for about 5 minutes each side

Serve Kabobs over rice and enjoy!
